Lately I've been working a lot so all creative thoughts have been geared towards dinner, and not much sewing or crafting (soon!)
This week I made "Coconut chicken with sweet chili dipping sauce."
Four things I think about when cooking-
1.) Is it healthy? (this one isn't entirely healthy because of the high amount of saturated fat in the coconut and the oil you use to fry the chicken in)
2.) Is it affordable on a budget? (this definitely is! I already had chicken, flour, egg, and panko bread crumbs. My only purchase was the Sweet Chili Sauce which we'll use again, and the coconut)
3.) How much time does it take?? (This didn't take much time at all!)
4.) Was it good? (this was DELICIOUS!)
I also made roasted Chickpeas for a healthy snack throughout the week. These pictures are in reverse order, so this is the final product. Directions: Rinse can(s) of chickpeas and let dry completely. Mix 1 teaspoon each of the following with chickpeas: oil, "Tony C's" cajun seasoning, brown sugar. Last, bake at 400 degrees for 30 minutes (we baked ours longer to make them crunchy) Delicious and healthy!
