:) Special thanks to Becca and Kyla coming to visit Westwood today!!!!! It was such fun to have them there :). The kids just loooved Kyla and she was so sweet to hug on me for a minute when she left-just melts my heart! She said "I love you Aunt Sara, you don't even know how much!"

Several mornings this week as I have been ready to dash out the door God has stopped me in my tracks with my mouth hanging open at the sight of the beautiful sunrise! So, of course, I've just HAD to take pictures before leaving the house! :) Isn't God good?

Lately I've been working a lot so all creative thoughts have been geared towards dinner, and not much sewing or crafting (soon!) This week I made "Coconut chicken with sweet chili dipping sauce." Four things I think about when cooking-
1.) Is it healthy? (this one isn't entirely healthy because of the high amount of saturated fat in the coconut and the oil you use to fry the chicken in)
2.) Is it affordable on a budget? (this definitely is! I already had chicken, flour, egg, and panko bread crumbs. My only purchase was the Sweet Chili Sauce which we'll use again, and the coconut)
3.) How much time does it take?? (This didn't take much time at all!)
4.) Was it good? (this was DELICIOUS!)
I also made roasted Chickpeas for a healthy snack throughout the week. These pictures are in reverse order, so this is the final product. Directions: Rinse can(s) of chickpeas and let dry completely. Mix 1 teaspoon each of the following with chickpeas: oil, "Tony C's" cajun seasoning, brown sugar. Last, bake at 400 degrees for 30 minutes (we baked ours longer to make them crunchy) Delicious and healthy!

Congrats to Brett for becoming a member of Beta Gamma Sigma Honor Society tonight! We went to a banquet at the Cosmopolitan hotel in Fayetteville for it. Brett has worked very hard in his Master's program and I am proud of his accomplishment!

We had a housewarming party for our dear friend Mikayla today! She bought a house in Siloam Springs, and teaches in Siloam as well.She had everything in her house looking great! :)

We had plenty of goodies and snacks and lots of guests to enjoy them!

This week I made sweet potato fries..........I sliced some sweet potatoes and then put a bit of oil and "Tony C's" cajun seasoning on them-delicious and easy!
I also made the caesar salad dressing I've made several times and we had "Chicken caesar salad" one night this week for dinner. It was very good, and you can find the recipe on www.allrecipes.com The name of the recipe is "Caesar Salad Supreme."
Yum! Today I made brownies for a housewarming party Jana and I are hosting for a friend of ours!

Today we celebrated Nathan's birthday with family. We had a great time!



Nathan wanted Becca to light the candles in his cupcake and wanted us to sing again, and again, and again........ :)

Today I'm pulling a bit of inspiration from my sister, Becca. We are having dinner guests tomorrow, and I'm also working later than normal and need things in an organized manner when I get home so I can prepare dinner on time. So, tonight I laid out the serving dishes I'll be using, with recipes for the food that will go inside. Should make entertaining go much smoother! :) Thanks Becca! (I got this idea from her)
